OUR SUPPLIERS

We source as many of our products locally.  Where there are not local suppliers we buy fairtrade and organic as much as possible.

Meat

Most of our meat from Williams and Bonham butchers in Mold. All this meat is locally reared and the bacon home cured. The gammon we use in our sandwiches, rarebit and salads comes from these sources and we cook it ourselves and then use the stock to make our delicious pea and ham soup.

Poultry & Eggs

We only use free range eggs and chicken. Eggs come from Hollies Farm at Cinypandy just outside Gwernaffield.  We have visited our hens and know they are having a wonderful life with lots of grass making their yolks a rich yellow colour.  Our free range chicken comes from Ty'n y Celyn Farm Llanbedr.

Ice Cream

We only sell ice cream in cones as a way of helping to reduce waste.  All our ice cream comes from Cheshire Farm www.cheshirefarmicecream.co.uk    This is a traditional dairy ice cream using fresh milk and cream with no artificial flavourings.  We stock 7 delicious flavours - vanilla pod, chocolate, strawberries and cream, rum & raisin, mint choc chip, millionaires shortbread and Jane's favourite honeycomb.  In the summer months we also sell our ice cream from our fabulous ice cream trike out on the grass.  

Cheeses

We use a range of Welsh cheeses in our Ploughman's and for sandwiches.

Pont Gar Blue, a soft blue cheese from Carmarthenshire www.carmarthenshirecheese.coThis was awarded the titles of ' Best new cheese - Blue' and 'Best Welsh Cheese' at the 2007 World cheese awards.

Snowdonia Thunder from the Snowdonia Cheese Company www.snowdoniacheese.co.uk is a mature cheddar with garlic & garden herbs and comes in a distinctive green wax coating.  We serve this with tomatoes in a Ciabatta and as a cheesy topping for our Vegetable Charlottes.

Caws Llyn Mature Red Cheddar comes from South Caernarfonshire Creamery www.sccwales.coWe use it for the Gammon and Cheese Ciabattas and in our Welsh Rarebit and cheese scones.

Chutneys

we make all our own chutneys using seasonal ingredients, wherever possible grown locally.

Vegetables

We try to source as much of our fruit and vegetables locally.  This year we are receiving fruit & vegetables from Mostyn Gardens which is a Groundwork Trust sponsored project giving employment opportunities to unemployed young people. The project is run by horticulturist extrordinaire Phil Handley who has been supplying us since we started.

Erlas Garden in Wrexham also brings us fruit & veg. This is managed by a project providing wonderful work experience for people with learning difficulties. The quality of the produce is amazing & they have even restored a victorian mushroom shed and we periodically receive basket loads of wonderful mushrooms.

In season Jane's garden provides rhubarb, herbs, soft fruit and flowers for our tables.  We also have a growing group of local amature growers who bring their surplus crops in.  If you grow more than you need please do give us a call - we can usually use anything in any quantity and will pay market rates.  This autumn we had 37lbs of damsons from a tree in a garden just 75 metres from the cafe.  W quickly turned it into many kilner jars of truly delicious damson jam.

It is difficult to source sufficient locally grown fruit & veg all year around and so we do have to supplement using a fruit and vegetable wholesaler. 

Alderwicks soft drinks

We stock the absolutely delicious Alderwick's Elderflower Spritz. This is a Wales the True Taste Award winning drink.
